- 1 large onion, chopped
- 2 cloves garlic, chopped
- olive oil cooking spray
- 1 packaged Gimme Lean brand “Sausage”
- 1 lb elbow macaroni, cooked al dente
- 1 jar tomato sauce (cook’s choice)
- chopped flat leaf parsley
- nutritional yeast, seasoned rice vinegar, tabasco sauce (optional seasonings)
Spray pan with olive oil and cook onions & garlic until lightly browned. Add Gimme Lean brand “sausage” and chop up with spatula into bite size pieces. Spray the mixture generously with olive oil and cook with onion/garlic until browned. Add the cooked macaroni to the pan and toss to mix evenly. Add the sauce and heat. Serve topped with parsley. If you want to add a cheesy flavor, drizzle with the seasoned rice vinegar and some nutritional yeast and toss. And of course feel free to add some heat with tabasco or red pepper flakes!
As with most of my recipes, improvisation is always welcome. Add peppers & onions if you like… try different varieties of jar sauce, or add a can of tomatoes instead. Experiment with adding more or less macaroni to make it “meatier,” as well as more or less sauce to your liking. That’s what it’s all about, making something that you’ll enjoy eating.
This meal goes nicely with a green salad lightly dressed with an olive oil/lemon juice vinaigrette.
